Prepare the grapefruit peels by first removing any of the white pith.

Add the peels and the lemon juice to a blender and blend well.

Pour 50 mL of the mixture into a small saucepan and add the agar-agar.

Heat on medium and whisk until the agar-agar has dissolved.
5.
Take off the heat and slowly add the rest of the juice solution.
6.
Place in freezer until a gel forms.
7.
Strain through a cheesecloth and bottle.
8.
Will keep for a couple of days.
