Peel the zest of 4 well washed lime, careful to discard the bitter pith.

Quarter the limes and add them to a large mixing bowl with the zest and the ginger.

Add the sugar and make sure everything is well covered.

Cover and leave for one to two days.

Strain the mixture into another bowl, making sure to use a wooden spoon, or similar, to squeeze as much juice and liquid out of the mixture as possible.

Stir in the vinegar.

Funnel into bottles and store in a refrigerator for about a month.

It will be ready when sugar has completely dissolved (shaking once daily can speed this process up).
9.
Use within 6 months, keeping refrigerated.
- 4 Lime
- 1 cups Demerara sugar
- 6 tbsp grated Ginger root
- 1-2 cups Apple cider vinegar
